Chicken & Dumplings

Chicken cubes and frozen mixed vegetables are in a saucy mixture of soup, onion and milk, and then topped with dumplings from a biscuit mix.
 

Ingredients

  • 1 can cream of chicken soup
  • 1 1/4 cups milk
  • 10 oz. pkg. frozen mixed vegetables, partially cooked
  • 10 oz. (about 2 cups) cooked white meat chicken, cubed or shredded
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic salt
  • 1/4 cup chopped onion
  • 1 cup Bisquick baking mix
  • 1 large egg, beaten

Method

Heat soup, 1 cup of the milk, veggies, chicken, salt, pepper & onion in saucepan or large skillet. Cook over medium heat 10 minutes, stirring occasionally. Reduce heat. Combine Bisquick, egg and remaining milk to form soft batter. Drop by spoonfuls to make dumplings on top. Partially cover and simmer for 12-15 minutes or until dumplings are cooked through. Spoon some of liquid over dumplings while simmering. Dumplings will fluff up to cover most of the top.

 

Notes: I use fat-free or reduced-fat products.
