Chicken Cordon Bleu Casserole

Anywhere you take this dish, it will be sure to go quickly. Chicken, ham and cheddar cheese all together in a casserole with a bread crumb top.
Ingredients
- 4 cups cooked chicken, cubed
- 3 cups fully cooked ham, cubed
- 4 oz shredded cheddar cheese
- 1 cup chopped onion
- 1/4 cup butter, plus 2 tablespoons
- 1/3 cup flour
- 2 cups light cream
- Topping:
- 1 cup dry bread crumbs
- 2 tablespoons butter, melted
- 1/4 cup shredded cheddar cheese

Method
In large bowl, combine chicken, ham, and cheese then set aside. In a large saucepan, saute onion in butter until tender. Add flour and stir to form a paste. Gradually add cream, stirring constantly. Bring to a boil and boil for 1 minute or until thick. Remove from heat, pour over meat mixture and stir to combine. Spoon into a greased 13 x 9 inch baking pan. Toss bread crumbs with butter, stir in cheese and sprinkle over casserole. Bake uncovered at 350 degrees for 30 minutes, or until heated through.
