Chicken Cantaloupe Salad

Chicken is combined with cantaloupe, celery, grapes and almonds, and coated with a dressing of mayonaise, lemon juice and curry powder.
 

Ingredients

  • 2 whole chicken breasts, cooked & cubed
  • 1/2 cantaloupe, cubed
  • 2 stalks of celery, sliced
  • 1/2 pound of red seedless grapes, cut in half
  • 1/2 cup of toasted, slivered almonds
  • Dressing:
  • 1/4 cup mayonaise
  • 1/2 teaspoon lemon juice
  • 1/8 teaspoon curry powder

Method

Prepare fruit, celery, and chicken in a medium bowl. Mix dressing and gently stir with chicken, etc. Refrigerate for 2 hours. Sprinkle almonds on top and serve.

 

Notes: It's very refreshing to eat in the summer. We like to have some Akmak crackers to enjoy with our salad.
