Chicken Cacciatorre

Tomato sauce and Parmesan cheese top these bread crumb-coated chicken breasts. Serve with rice or pasta.
 

Ingredients

  • 1 (14.5oz)can diced tomatoes (Italian recipe)
  • 1 (6oz)can tomato paste (Italian recipe)
  • 1/3 cup chopped green sweet pepper
  • 2 garlic cloves (minced)
  • 2 cups bread crumbs(Italian style)
  • 6-boneless, skinless chicken breasts
  • 1 large egg, lightly beaten
  • olive oil
  • 1 cup Parmesan cheese (grated)

Method

In a pot pour the tomatoes, tomato paste plus 1 can water, sweet pepper, and garlic. Cook on low. Pour the bread crumbs in a wide bowl. Dip the chicken in the egg, then coat with the bread crumbs. In a skillet heat some olive oil and brown the chicken on both sides. Place in a 13x9-inch baking pan. After all the chicken is browned and in the baking pan sprinkle some cheese on each piece of chicken. Pour the sauce over the chicken, and then sprinkle the remaining cheese over the sauce. Bake in 350 degree oven for 35 to 45 minutes or until done (170 degrees).

 

Notes: I serve this with rice. It has become one of my family's favorite meals. I also serve with cut green beans, tossed with onion and butter and a little salt and pepper.
