Chicken Cacciatore

The sauce is simmered while the chicken bakes, then the two are combined and simmered longer in this version of chicken cacciatore.
Ingredients
- 1 whole chicken, cut up
- 1 Lg. onion (sliced)
- 2 1-Lb cans Stewed tomatoes (Italian style)
- 1/3 cup green sweet pepper sliced 1/2- inch thick
- 3 garlic cloves (minced)
- 1/2 tsp celery seeds
- 1/2 cup white dry wine (optional)

Pre-heat oven to 350 degree. Place the chicken in a large baking pan and season with salt and pepper to taste. Bake for 40 minutes, then turn the chicken over and bake another 40 minutes or until done. Meanwhile, heat some cooking oil in a Dutch oven or large deep pot. Add the sliced onions and saute until very tender. Add the tomatoes, sweet pepper, garlic, celery seeds, and wine. Cook on low for 45 minutes. Shred the chicken into bite-size pieces and add to the sauce. Cook an additional 30 minutes. Serve over rice.
Notes: This tastes better the day after it's made. When I have guests coming I put it in the crock pot on low the day after I make it for 1hr. I like to serve it over rice with a green vegetable like green beans or broccoli.
