Chicken Breasts with Creamy Basil Sauce
A cream sauce flavored with basil and garlic accompany chicken breasts for a quick and easy meal.
Ingredients
- 2 tbsp margarine or butter
- 1/4 tsp each salt and pepper
- Four 4- or 6-oz. boneless, skinless chicken breasts
- 1 tbsp all-purpose flour
- 1 C fat-free half-and-half
- 2 tsp minced garlic
- 1 large coarsely chopped tomato
- 1/4 C coarsely choppped fresh basil
- Basil leaves for garnish

Prep Time: 15 min Cooking Time: 13 to 18 min. In large non-stick skillet, melt margarine over medium-high heat until sizzling. Stir in salt and pepper. Add chicken; cook 8 to 12 minutes or until juices are clear (turn once). Remove from skillet; set aside. Reduce heat to medium. Stir flour into skillet. Add half-and-half and garlic, stirring constantly 1 minute or until slightly thickened. Stir in tomatoes and basil. Return chicken to skillet. Cook 4 or 5 minutes or until heated through. Garnish with basil leaves.
