Chicken Avocado Italian Sandwich

Chicken is combined with onion and green pepper, placed atop Italian bread, topped with tomato, avocado and Swiss cheese and broiled.
Ingredients
- 1 lb. boneless, skinless Chicken breasts
- 1/2 med. sliced onion
- 1/2 med. julienned green pepper
- 1 med. sliced tomato
- 1 med. sliced avocado
- 2 slices Swiss cheese, cut diagonally into 4 pieces
- 1 whole loaf Italian or French bread
- 1/2 cup Italian dressing
- 2 tbsp olive oil
- 1 tbsp mayonnaise
- Italian seasoning
- parmesan cheese
- garlic powder

Cook chicken breasts in skillet in the Italian dressing until done. Remove chicken. Saute onion and green pepper in same skillet until onion is transparent. Meanwhile, cut bread lengthwise to--but not through--the other side. Brush olive oil on the cut part of the bread and sprinkle with garlic powder, Italian seasoning, and parmesan cheese. Broil until very light brown. Cut chicken into long strips and return to skillet. Mix with onion and green pepper. Spread mayonnaise on the browned bread. Spoon chicken mixture on one side of the bread; top chicken with tomato, avocado and Swiss cheese slices. Return to the broiler until cheese is melted. Remove from broiler and close sandwich. Cut crosswise into 4 sections.
