Chicken and Spinach Salad with Hot Bacon Dressing

A hearty, healthy spinach salad with seasoned chicken breasts, avocado, radish and green onion in a hot vinegar dressing.
 

Ingredients

  • 3 boneless skinless chicken breast
  • 1 cup Italian dressing
  • 1 pound bacon, cut up
  • 3 cups water
  • 1 cup granulated sugar
  • 1 chopped onion
  • 1 cup vinegar
  • 4 tablespoons flour
  • 1/4 teaspoon fresh ground pepper
  • 4 cup fresh baby spinach or 1 regular size bag
  • 1 avocado, diced
  • 1/2 cup shredded carrots
  • 1 green onion, chopped
  • 1/4 cup sliced red radish

Method

Place chicken breasts and Italian dressing into a resealable bag and shake until chicken is well coated. Refrigerate at least one hour--or up to 12 hours. Fry bacon in a large skillet. Add onions and saute until onions are tender. Pour off grease, reserving one tablespoon. Stir in flour, add vinegar, water, sugar and reserved bacon grease. Stir and let simmer for 5 minutes then add pepper. Reheat on low when ready to use. Grill chicken breast 8-10 minutes on each side or until thickest part of chicken gets to 190 degrees. When cool enough to touch, cut chicken into bite sized cubes. On individual plates, assemble salads by dividing baby spinach, chicken, avocado, shredded carrots, green onions and sliced red radishes. Top with desired amount of hot bacon dressing and serve.

 

Notes: My family enjoys this as a main dish on hot summer days. It's even more fun when we grab any of the fresh produce that we can from our own garden.
