Chicken and Rice with Bell Peppers

Cubes of chicken, colorful strips of bell pepper, and onion are cooked together and served over jasmine rice.
 

Ingredients

  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1 medium onion, chopped
  • 1 1/2 lbs skinless, boneless chicken, cubed
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 tsp chicken bouillon granules
  • 1 tsp cornstarch
  • 1 1/2 tbsp water
  • Cooked jasmine rice

Method

Prepare jasmine rice, using package directions for 5 servings. Heat olive oil in a frying pan, add minced garlic, chopped onion and cubes of chicken. Sprinkle salt and pepper to taste. When chicken is no longer pink, add sliced bell peppers. Mix chicken bouillon, cornstarch and water; add to pan, then cover. Cook until tender but crisp. Serve chicken and pepper mixture over rice.

 

Notes: You can do this with any kind of meat. I've added steamed broccoli to this dish several times. But it's great by itself, too. My boyfriend pours a little soy sauce over the top of his to give it an Asian kick. Your rice should be done by the time your chicken mixture is done.
