Chicken and Mashed Potato Po' Boy Lasagna

Cooked chicken with prepared gravy mix is layered with lasagna noodles, cheddar cheese and instant mashed potatoes.
Ingredients
- 1 box instant mashed potatoes
- 2 pkgs country gravy mix
- 1 lb boneless, skinless chicken breasts, cut up
- 4 Tbsp butter
- 1/2 of a white onion, diced
- 2 cups shredded cheddar cheese
- 1 box lasagna noodles
- Salt and pepper to taste

Prepare the gravy mixes and the instant mashed potatoes according to their individual package directions. In a skillet brown the chicken breasts in the butter. Add diced onion to the skillet with the chicken. Pour the country gravy over chicken, and let simmer on low heat for 10-15 mins, until chicken is no longer pink inside. While chicken mixture is simmering, prepare lasagna noodles according to the box directions. When noodles are done, drain and begin layering them in a 13 x 9" baking dish. When the first layer of noodles is in the dish, spoon on a thin layer of mashed potatoes. Next scoop on a layer of the chicken mixture. Sprinkle the chicken layer with some shredded cheddar cheese. Repeat the layering process all over again, beginning with the lasagna noodles. Bake at 350 degrees until hot.
Notes: This dish is easy to make and great on a cold winter's day. It will fill up your family quick and bring a fun new taste to the family table.
