Chicken and Chorizo Casserole

Flavor this chicken with chorizo sausage, a spicy Mexican sausage. Cover and bake the chicken and sausage together with rice.
Ingredients
- 1 1/2 c. uncooked long grain rice
- 1 small onion, chopped
- 1/2 c. peppers (sweet or hot), seeded and chopped
- 6 skinless, boneless chicken breasts (or packaged hind quarters)
- Seasoning (salt, pepper, garlic powder)3 c. water
- 1 pkg favorite chorizo (about 1lb)

Dump rice in a deep 13 x 9 baking dish. Add onion and peppers. Season chicken well. Add water. Place seasoned chicken in pan. Crumble chorizo and add atop and around chicken. Cover and cook in 350 oven for about 1 hour. Rice will have absorbed most all the liquid. Let stand for 5 minutes before serving.
Notes: The chicken & the rice will be flavored by the chorizo. Be daring. Add other vegetables to the rice, or even shredded cheese. Use chicken stock instead of water. Prepare ahead of time. Carefully add the liquid at cooking time. Try substituting hot Italian sausage for the chorizo for yet another great flavor combination.
