Chicken and Bacon Cheddar Dumplings

This dish takes a little bit of time, but it is just as good as it sounds. The homemade dumplings have a great flavor combination and make for a great meal.
 

Ingredients

  • Dumpling:
  • 8 oz cream cheese, at room temperature
  • 2 cups flour
  • 3 slices bacon
  • 1/2 an onion
  • 4 garlic cloves
  • 1 cup shredded cheddar
  • 2 tablespoons thyme
  • 1/2 cup buttermilk
  • Pinch of salt
  • Chicken stuffing:
  • 3 chicken thighs
  • 3 chicken legs
  • 1/2 an onion
  • 4 cloves garlic
  • 1/4 cup heavy cream
  • 1/4 cup sweet peas
  • 2 bay leaves
  • 1 tablespoon thyme
  • 2 quarts chicken stock
  • 2 cups water
  • 2 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon olive oil
  • 2 tablespoons Old Bay seasoning

Method

Dumplings: In a large pot, cook bacon for 3 minutes, add onions and cook for 3 more minutes, then add garlic and cook until bacon is crisp. Set bacon mixture aside. In a bowl, using a hand mixer or a pastry mixer, mix the cream cheese until smooth. Add buttermilk and slowly mix. Add half the flour to the bowl and mix, then the other half of the flour. Add salt and bacon mixture to bowl and mix until blended well. Mold into small balls and set in fridge for 2 hours. Chicken stuffing: In pot bacon mixture was sauteed in, add oil and then add onion and garlic. Saute mixture and then add stock, thyme, bay leaves, salt, pepper, Old Bay, chicken and water to the pot. Cook at high until chicken is falling off the bone, 35 to 40 minutes. Skim foamy stuff off top of mixture. Using a fork, pull chicken off bone and take bones out of pot. Add the peas, heavy cream and dumplings slowly one at a time. Cook at a simmer for an additional 15 minutes. Garnish with parsley and enjoy.
