Chicken A-La-Prince

Canned chicken, pineapple chunks and water chestnuts are combined in a slightly thickened, sweet sauce to serve over rice.
Ingredients
- 3 cups white rice, uncooked
- 6 cups water
- Sauce:
- 1 15-oz can chicken
- 1 20-oz can pineapple chunks, with juice
- 1 8-oz can sliced water chestnuts
- 1/2 cup brown sugar
- 1/3 cup white sugar
- 1 tbsp cornstarch
- Crushed red chili peppers, to taste
- 1 tsp dried minced onions
- 1 tbsp teriyaki glaze with honey and pineapple
- Optional: Slivered almonds
- 1 bell pepper, chopped

Method
In saucepan, combine rice with water. Cover and bring to boil. Keep covered and simmer, unstirred, for 15-20 minutes, or until water is absorbed. Sauce: Meanwhile, in a large skillet, mix sauce ingredients and cook over medium heat, stirring, until thickened and bubbly. Add almonds and bell pepper, if desired. Serve over rice.
Notes: Good with a side salad or steamed vegetables.
