Chicken A-La-Prince

Canned chicken, pineapple chunks and water chestnuts are combined in a slightly thickened, sweet sauce to serve over rice.
 

Ingredients

  • 3 cups white rice, uncooked
  • 6 cups water
  • Sauce:
  • 1 15-oz can chicken
  • 1 20-oz can pineapple chunks, with juice
  • 1 8-oz can sliced water chestnuts
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 tbsp cornstarch
  • Crushed red chili peppers, to taste
  • 1 tsp dried minced onions
  • 1 tbsp teriyaki glaze with honey and pineapple
  • Optional: Slivered almonds
  • 1 bell pepper, chopped
 
Method

In saucepan, combine rice with water. Cover and bring to boil. Keep covered and simmer, unstirred, for 15-20 minutes, or until water is absorbed. Sauce: Meanwhile, in a large skillet, mix sauce ingredients and cook over medium heat, stirring, until thickened and bubbly. Add almonds and bell pepper, if desired. Serve over rice.

 

Notes: Good with a side salad or steamed vegetables.
