Cheesy-stuffed Tomatoes

A mixture of mozzarella, cream cheese, diced chicken and broccoli is spooned into tomato shells and baked.
 

Ingredients

  • 6 medium-to-large tomatoes
  • 2 cups shredded mozzarella cheese
  • 1 cup small broccoli florets
  • 1 8-oz cream cheese, softened
  • 2 cups cooked and diced chicken breast 1 tablespoon water
 
Method

Preheat oven to 375 degrees. Slice tops off tomatoes and remove insides with a melon baller or spoon, reserving insides in a separate dish. Sprinkle salt, pepper and some of the shredded cheese into each tomato. Steam broccoli and 1 tablespoon water in microwave, covered with vented plastic wrap, for 5 minutes. Drain. Combine cream cheese, broccoli, chicken, HALF of tomato insides and 1 cup of the shredded cheese. Spoon mixture into each tomato; sprinkle the rest of the shredded cheese on top. Bake about 20 minutes or until cheese is bubbly.

 

Notes: The red and green in this dish make it very festive for Christmas. The remaining tomato pulp may be placed in a baking dish, sprinkle with Parmesan cheese, salt and pepper, and baked along with the stuffed tomatoes.
