Cheesy Chicken and Rice Bake

This baked dish is simple to prepare and makes a great meal. Just add a salad for a balanced meal. Prepare ahead of time and just bake when needed.
 

Ingredients

  • 1 cup uncooked rice
  • 1 can cream of chicken with herb soup
  • 1 1/3 cup water
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 4 boneless skinless chicken breasts
  • 1 cup shredded cheddar cheese
 
Method

Preheat oven to 375 degrees and spray a 9 X 13 baking dish with nonstick cooking spray. Combine rice, soup, water, onion powder and pepper in dish. Place chicken on top of mixture. Sprinkle with extra pepper, if desired. Cover with foil and bake 45 minutes. Remove from oven and sprinkle cheese on chicken, replace foil and bake an additional 5 minutes or until cheese is melted.
