These enchiladas are a snap to make and if you are using them as a celebration you can celebrate more than cook. Use these at your next fiesta.
Preheat oven 350 degrees.
In large microwavable bowl, add cream cheese and diced tomatoes. Microwave on high for 1 minute and 30 seconds. Add in next five ingredients and mix well to make filling for enchiladas. Add 1/2 cup to center of each wheat tortilla wrap. Lift bottom edges to the center and then wrap. Place filled tortillas side by side in glass or large baking dish.
Top enchiladas with enchilada sauce, spread evenly. Then, top with Mexican shredded cheese.
Bake at 350 degrees for 12-15 minutes when cheese on top is slightly toasted. Garnish as you wish.
Notes:
Place on plate next to rice and beans. Garnish as you like.
