Celebrate Enchiladas


These enchiladas are a snap to make and if you are using them as a celebration you can celebrate more than cook. Use these at your next fiesta.



Ingredients:

  • 1 8oz package of cream cheese
  • 1 can diced tomatoes
  • 2 cans of prepared chicken (drained)
  • 1 can of black beans (drained)
  • 1 green pepper sliced in strips
  • 1 red (mild) pepper sliced in strips
  • 1 can of whole kernel corn (drained)
  • 1 package of whole wheat tortilla soft wraps
  • 1 can of enchilada sauce
  • Optional Garnishes:
  • 1 cup shredded lettuce
  • 1/2 cup of diced tomatoes (fresh)
  • 1/2 cup of black olives
  • 1/2 cup of sour cream, ranch dressing or Mexican chip dip
  • 1 8 oz. package of Mexican shredded cheese (mix of 3 cheeses; available already mixed in stored)

Method

Preheat oven 350 degrees. In large microwavable bowl, add cream cheese and diced tomatoes. Microwave on high for 1 minute and 30 seconds. Add in next five ingredients and mix well to make filling for enchiladas. Add 1/2 cup to center of each wheat tortilla wrap. Lift bottom edges to the center and then wrap. Place filled tortillas side by side in glass or large baking dish. Top enchiladas with enchilada sauce, spread evenly. Then, top with Mexican shredded cheese. Bake at 350 degrees for 12-15 minutes when cheese on top is slightly toasted. Garnish as you wish.

Notes: Place on plate next to rice and beans. Garnish as you like. Makes a wonderful celebration dinner for any special occasion!
