Caribbean Stewed Chicken

This great traditional chicken dish is prepared to perfection and is a simple way to change things up.

Ingredients
  • 6 lb chicken, cut into pieces
  • 5 cloves garlic, crushed finely
  • 1 yellow onion
  • 1 cup chives, finely chopped
  • 3/4 cup culantro, finely chopped
  • 1 skotch bonnet pepper
  • 4 pimentos
  • 1 tsp salt1 tsp black pepper
  • 1/3 cup sugar
 
Method

Wash and clean chicken pieces thoroughly. Add all ingredients except sugar and mix until all pieces are coated properly. Let stand for half an hour. Heat Dutch oven on a high flame until you see smoke and add sugar. Sugar should melt very quickly. It will turn caramel then get darker and start to bubble and separate, that's when you add the chicken and stir quickly. When chicken is completely mixed in sugar cover and lower flame to medium. Cook until all liquids evaporate then add 3 cups water. Let cook until most of the water evaporates again leaving a little for gravy.
