Captivating Cajun Chicken

Tomato sauce and Cajun seasonings form the sauce for this tender chicken--first cooked in a crockpot then finished on a grill.
 

Ingredients

  • 12 pieces frozen chicken, drumsticks or thighs
  • 4 8 oz cans tomato sauce
  • 2 teaspoon Cajun seasoning

Method

In an iron skillet, saute 2 cans tomato sauce and Cajun seasoning, stirring constantly. When sauce begins to thicken, continue stirring. As sauce just begins to darken (but right before it burns) turn off heat, move to cold burner and mix in 2 other cans of sauce. Immediately transfer to crockpot or slow cooker. Add frozen chicken to sauce mix in crockpot. Set crockpot to lowest setting. Let cook for at least 2 hours. For serving remove chicken and cook on grill. Leave sauce in crock pot. When chicken is finished grilling, sauce may be served on the side or drizzled on top.

 

Notes: Do not take chicken or the sauce out of crockpot or turn crockpot off until it is time to cook the chicken. Do not refrigerate marinade or store at room temperature.
