Candied Chicken Breast with Bacon


Chicken breasts or thighs are wrapped in bacon, brushed with a sauce of ketchup, peach preserves, brown sugar and seasonings, and grilled on a plank.



Ingredients:

  • 1/2 cup ketchup
  • 1/2 cup peach preserves
  • 1/2 cup brown sugar
  • 2 Tablespoons worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon crushed garlic
  • Dash of salt & pepper  
  • 1/4 cup orange juice
  • 8 boneless, skinless chicken breasts or thighs
  • 16 slices thick cut (hickory) bacon
  • 8 toothpicks, soaked in water for about 10 minutes
  • 2 grilling planks (prepared according to manufacturer's directions)

Method

In a small bowl mix ketchup, peach preserves, brown sugar, worcestershire, liquid smoke, crushed garlic, salt and pepper. Mix 1/2 cup of the sauce mixture and the orange juice in a small bowl. Dip each piece of chicken into this mixture, then wrap each with 2 slices of bacon, wrapping one slice lengthwise and the other crosswise around the chicken. Use toothpicks to hold together. Place chicken on prepared planks on grill over medium heat, cooking chicken for approximately 20 minutes on each side. Then transfer chicken directly onto the grill and coat with the thick sauce mix; grill about 3 to 5 minutes on each side, just enough to "candy" the sauce.

Notes: Serve with a salad.
