California Greek Salad OPA


Salty and sweet, crunchy and creamy--this salad makes a satisfying and healthy main dish.



Ingredients:

  • 1 lb triple washed baby spinach
  • 4 Roma tomatoes
  • 1/2 lb sliced white mushrooms
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup dried cranberries
  • 1/2 cup crumbled, sheep's milk feta cheese
  • 1/2 medium red onion, thinly sliced
  • 1 cucumber, seeded, peeled and sliced
  • 1 lb shredded chicken
  • 1/3 cup low fat raspberry vinaigrette
  • 4 whole wheat pitas, cut in quarters

Method

Simply toss all ingredients together in a large bowl, except dressing and pitas. Before serving, toss salad with dressing. Serve warmed pitas on the side.

Notes: This salad has become a staple around my home. It's also quite delicious with grilled salmon in place of the chicken.
