Calico Chicken and Dressing

A fast, easy, and healthy casserole of chicken, cornbread stuffing, broccoli and corn.
Ingredients
- 3 cups chicken broth
- 2 lbs boneless skinless chicken breasts, cut into 1 inch pieces
- 1/2 cup chopped onion
- 1/3 cup chopped red bell pepper
- 1 (6 oz) box cornbread stuffing mix
- 1 (16 oz) pkg chopped frozen broccoli, thawed and drained
- 2 cups frozen whole kernel corn, thawed
- 2 (10 3/4 oz) cans cream of celery soup
- 1 cup milk
- 1 cup plain breadcrumbs
- 1/3 cup margarine, melted

Preheat oven to 350 degrees F. Spray a 9 x 13 x 2 inch baking dish with nonstick cooking spray and set aside. In a 2 quart pot, bring broth, onion, and pepper to a boil over high heat. Reduce heat to medium and add chicken. Cook over medium heat for 10 minutes. Remove from heat. Using slotted spoon, remove chicken, onion and pepper from broth and put in bottom of dish. Prepare stuffing mix with broth according to package directions and set aside. Sprinkle broccoli and corn over chicken. Stir soups and milk together in a large bowl. Pour over corn. Spoon stuffing mixture over top, sprinkle with breadcrumbs and drizzle with melted margarine. Bake uncovered for 45-55 minutes until set.
Notes: This is a great alternative to traditional turkey and dressing. It even has healthy green and yellow vegetables. Serve with cranberry sauce or salad for a perfect Thanksgiving dinner.
