Buffalo Chicken Salad with Honey-Tabasco Dressing

Chicken breasts are brushed with a hot pepper sauce mixture, baked, cubed and combined with crumbled blue cheese, pecans, celery, onion, and grapes.
 

Ingredients

  • 4 (4 oz) boneless, skinless, chicken breast halves
  • 1/4 cup Tabasco sauce
  • 1 1/2 Tbsp champagne vinegar
  • 1 Tbsp butter, melted
  • 1/2 tsp salt
  • For Honey-Tabasco Dressing:
  • 1/3 cup extra virgin olive oil
  • 1/3 cup champagne vinegar
  • 1/2 cup honey
  • 2 tsp Tabasco sauce
  • 3 shallots, minced
  • 1 Tbsp toasted sesame seeds
  • 1/2 tsp each, salt and pepper
  • Additional salad ingredients:
  • 1 cup crumbled blue cheese
  • 1 cup chopped pecans, toasted
  • 4 stalks celery, chopped
  • 1/2 cup red onion, chopped
  • 2 cups red seedless grapes

Method

Preheat oven to 400 degrees. Spray an 8" square baking dish with nonstick spray. Mix Tabasco sauce, vinegar, melted butter and salt together. Paint Tabasco mixture evenly over surface of chicken breasts and place in prepared baking dish. Place in oven to bake about 25 minutes or until done. Remove from oven and let cool; when cool enough to handle cut into cubes and place in salad bowl. Place the ingredients for Honey-Tabasco Dressing in bowl of food processor or blender and pulse a few times to emulsify ingredients. Add blue cheese, pecans, celery, red onion and grapes to salad bowl, toss lightly; add the dressing and toss to coat ingredients. Cover and refrigerate until ready to serve.

 

Notes: Hot wings and cheese transformed to a savory salad.
