Bright Orangemary Grilled Chicken Salad

Orange and rosemary are used--along with basil and oregano--to flavor these marinated chicken breasts. The chicken is grilled, cut into strips, and served on top of salad greens garnished with orange segments.
Ingredients
- 4 Boneless skinless chicken breast
- 2 sweet navel or blood oranges
- Grated zest from one-half of an orange
- 1/4 Cup extra virgin olive oil
- 1 Tbsp fresh Rosemary, finely chopped
- 1 Garlic clove, chopped
- 1 Tsp fresh Basil
- 1 Tsp fresh Oregano
- Salt and Pepper to taste
- 1 bag of your favorite premade (or home made) salad greens with your favorite veggies

Marinade/Dressing: In a food processor or blender put the juice of the orange that you have zested, the rosemary, garlic, basil, and oregano. Place lid on processor/blender; turn on and SLOWLY add Olive oil. Marinate the chicken: Salt and pepper chicken breasts LIGHTLY both sides and place into a zip-top bag. Place orange zest and HALF of the marinade/dressing into the bag. Seal tightly, making sure to get as much air out of the bag that you can. Place in the refrigerator at least 30 minutes. Cooking: Heat grill or grill pan and brush with olive oil. Place chicken breasts on grill and grill for about 7 minutes per side or until done. (Discard this portion of the marinade.) While breasts are grilling, peel and segment the second orange; brush or lightly dip into reserved marinade/dressing mixture. When chicken is almost cooked, place orange segments on a piece of foil on the grill, leaving them on about 1 minute per side until warmed. Assembly: Slice chicken on a diagonal. In a large bowl toss your favorite salad mix (I prefer spring mix for this) with the remaining reserved half of the marinade/dressing mixture. Arrange on a large serving plate or bowl and arrange breast strips on top. Garnish with grilled orange segments.
Notes: This is very light but very tasty and can be enjoyed all year long. Add crumbled Blue cheese for an extra touch.
