Blackened Louisiana Chicken

Ingredients
- 2 large onions, sliced and halved
- 2 cups chopped fresh mushrooms
- 1 medium sized bottle red hot sauce
- 2 tsp flour
- 4-6 chicken breasts
- Seasonings; garlic salt, basil, Greek seasoning, Mrs. Dash
- Hamburger buns

Mix 1/2 bottle hot sauce and flour together to thicken sauce. Add seasonings to mixture to taste. Marinate chicken overnight in sauce mixture. Poke chicken with fork to allow marinade to penetrate. Lay out a good sized sheet of tinfoil. Spray with nonstick spray, and then add onions, mushrooms and remaining hot sauce mixture. Fold edges of foil together to make a packet. Place packet on grill. Cook until juices of sauce have almost evaporated, and the onions and mushrooms are just barely blackened. Occasionally open packet and stir to avoid vegetables sticking to foil. Place chicken breasts on grill about 7 minutes after foil packet. Cook until meat is cooked through, but still juicy. Serve on a bun garnished with onions and mushrooms, or serve over a bed of Basmati rice, cooked separately for 17 minutes in microwave or on stove. 1 cup rice to 1 1/2 cups water.
