Black Bean Picadillo Chicken

Chicken cutlets in a baking dish are topped with a cooked mixture of tomato, green pepper, onion, black beans and garlic, then topped with mozzarella and baked.
 

Ingredients

  • 1 15-oz. can black beans
  • 6 chicken cutlets
  • Salt and pepper
  • Garlic powder
  • 4 cloves garlic
  • 1 tomato
  • 4 tsp bottled hot pepper sauce
  • 1/2 green pepper
  • 1/4 purple onion
  • 1/4 cup small green olives (pitted)
  • 1 tsp tomato paste
  • Shredded mozzarella cheese
  • Oil
  • Hot cooked rice

Method

Chop tomato, green pepper and onion and garlic cloves; saute in oil in skillet until soft. Add black beans and tomato paste, hot sauce and olives; saute for 10 minutes and remove from heat. Season chicken cutlets with salt, pepper and garlic powder; arrange in baking dish. Pour Black Bean mixture over chicken. Sprinkle with shredded mozzarella cheese. Cover with aluminum foil and bake at 350 for 40 to 45 minutes. Serve over rice.
