Beufe Salad

Chicken and vegetables in a creamy dressing--serve on bread or a bed of lettuce.
Ingredients
- 1/2 lb chicken breast
- 1 can baby peas
- 2 large carrots
- 3 boiled potatoes
- 5 medium sized pickles
- 1 jar mayonnaise

Method
Boil chicken breast and carrots. When boiled, chop into small cubes. Chop pickles and boiled potatoes into small cubes as well. Combine all chopped ingredients into a large bowl and add mayonnaise, stir well until evenly distributed.
Notes: This is a very quick (1 hr max) recipe that is good for any occasion and goes well with lunch or dinner. Easy to make and very, very tasty.
