Best-Yet Sweet Chicken

Ground raw chicken is mixed with honey, carrots, two kinds of prepared mustard, curry powder and dried apricots for this sweet main dish.
Ingredients
- 1 pound ground raw chicken
- 1/2 cup honey, plus 2 Tbs.
- 1 pkg. frozen crinkle-cut carrots
- 3 Tbs. Dijon mustard
- 3 Tbs. French's prepared yellow mustard
- 2 Tbs. curry powder
- 20 dried apricot halves

Method
Preheat oven to 350 degrees. In a baking pan with lid, sprinkle ground chicken. Pour honey over chicken. Open package of carrots and pour contents over honey/chicken mix. Next, drizzle two remaining tablespoons honey over carrots, followed by Dijon mustard and regular mustard. On top, sprinkle curry powder generously. Finally, garnish with dried apricots. Bake in covered dish at 350 degrees for 90 minutes or until meat is fully cooked and apricots are browned.
Notes: This is best over a salad of greens and almonds, but is also delicious over rice.
