BBQ Chicken Burritos with Ole Thai Sauce


Barbecued chicken wrapped up wth healthy vegys and Monterey Jack cheese in a sweet tomato and fruit sauce, flavored with ginger and jalapeno.



Ingredients:

  • Sauce:
  • 4 fresh tomatoes, diced
  • 1 pint fresh grape tomatoes, halved
  • 1 cup diced fresh pineapple
  • 1 cup fresh red grapes halves
  • 4 cloves minced garlic
  • 1 finely chopped fresh jalapeno
  • 2 teaspoons fresh grated ginger
  • 1/2 cup apple juice
  • Burritos:
  • 2 cups chopped cooked barbequed chicken
  • 1 small diced sweet onion
  • 1 diced fresh zucchini
  • 1 cup peas
  • 2 cups shredded Monterey Jack cheese, shredded
  • 4-10 inch flour tortillas

Method

Preheat oven to 375 degrees F. In a medium bowl, combine all sauce ingredients and mix thoroughly. Spread 1/3 cup of sauce on the bottom of a 9 X 9 baking dish. Set aside briefly. In a large bowl, combine chicken, onion, zucchini, peas and 1 cup cheese and mix thoroughly. Lay equal portions across the bottom third of each flour tortilla. Roll burritos, secure with toothpicks and place burritos on top of sauce in dish. Cover with remaining sauce and remaining cheese. Cover dish with foil and bake for 20 minutes. Remove foil and bake for additional 15-20 minutes or until cheese is lightly browned.

Notes: Serving options: Serve with seasoned black beans with corn and mango, and Mexican brown rice.
