BBQ Chicken Burgers

Chicken is combined with oil, pepper, mayonnaise, shallot and bread crumbs, formed into patties and grilled with onions, barbecue sauce and cheese.
 

Ingredients

  • Ground chicken meat 2 lbs.
  • Shallot, minced 1 tbsp.
  • Cilantro, chopped 1 1/2 tbsp.
  • Low-fat mayonnaise 4 Tbsp.
  • Olive oil 3 tbsp.
  • Fine Bread crumbs 1 tbsp.
  • Cracked pepper 1 1/2 tsp.
  • Sea salt 1 1/2 tsp.
  • Maui onion, sliced 1/2 onion
  • Hickory BBQ sauce 3/4 cup
  • Smoked cheddar 3 slice
  • Pumpernickel rolls 3 rolls
  • Avocado 6 slices
  • Vine ripe tomatoes 2
  • Red leaf lettuce 6 leaves

Method

1. Heat a gas grill to HIGH heat and oil generously. Mix together the first 8 ingredients in a small bowl, except reserve 1 1/2 tbsp. of the olive oil, 1 tsp of the sea salt and 3 tbsp of the mayonnaise. Form mixture into three, 4 1/2-inch patties. Rub the burgers and Maui onions with the remaining olive oil and sea salt. Grill burgers and onion rings for 6-7 minutes, turning often, and brushing generously with the barbeque sauce. Burgers are finished when they are firm and juices run clear. Onions are cooked when lightly caramelized. 2. Top each burger with a slice of smoked cheddar cheese. Toast the rolls on the grill, then spread each side with the remaining mayonnaise swirled with some extra BBQ sauce. Assemble the burgers with the avocado and tomato slices, lettuce and grilled Maui onion rings.

 

Notes: The pumpernickel rolls in this recipe are approximately 4 to 4 1/2-inches in diameter. You can use any bun you would like. The pumpernickel is just a very tasty addition to this BBQ burger.
