Baked Italian Chicken

Quick and easy, yet elegant enough for guests--boneless, skinless chicken breasts baked with peppers, black olives and white wine.
 

Ingredients

  • 1-2 lbs chicken breasts
  • Dash garlic salt
  • Dash pepper
  • Dash salt
  • Dash oregano
  • Dash Italian seasonings
  • 1/2 cup olive oil
  • 2 cans black olives, pitted
  • 3 green bell peppers
  • 3 red bell peppers
  • 1/2 cup white cooking wine

Method

Season chicken on both sides and lightly brown in olive oil. Place browned chicken in glass 13 x 9 x 2 baking dish, slice up peppers and evenly cover chicken. Add one can of olives on top evenly. Pour white cooking wine on top and bake at 350 degrees for one hour and 15 minutes.

 

Notes: One pound of chicken will serve 4 people. Serve with rice and garden salad.
