Baked Fried Chicken

Excellent breaded chicken with lots of savory seasonings that is baked not fried.
 

Ingredients

  • 6 chicken breast halves
  • 1 cup 1% buttermilk
  • 1/2 c reduced fat biscuit baking mix
  • 1/2 c. cornmeal
  • 1 1/2 tsp. paprika
  • 3/4 tsp. salt
  • 3/4 tsp. poultry seasoning
  • 1/2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper

Method

Pour chicken into a large reasealable plastic bag; add buttermilk. Seal bag and turn to coat; refrigerate for 8 hours or overnight. In a shallow bowl, combine the biscuit mix, cornmeal, paprika, salt, poultry seasoning, garlic powder, pepper and cayenne. Remove chicken one piece at a time, allowing excess buttermilk to drain off. Discard buttermilk. Coat chicken with the cornmeal mixture, place in a greased 13x9x2 baking dish. Bake, uncovered at 400 for 25-30 minutes. Turn chicken over. Bake 20-30 minutes more-until chicken is done.
