Baked Chicken with Bacon Gravy
A super easy baked chicken in gravy with bacon. Serve over mashed potatoes.
Ingredients
- 4-6 Boneless, Skinless Chicken Breasts
- 1/2 lb. uncooked bacon, cut into 1/2" pieces
- 1 onion, chopped
- 1 26-oz. can creamed soup (any flavor)
- 1/2 soup can of water
- 1/2 cup sour cream
- Mashed potatoes (your favorite)

Method
In 3-4 quart casserole dish, layer chicken breasts, bacon, and onion. Mix soup and water together and pour over layers. Cover and bake at 350* for 75 min. or until chicken is falling apart. Remove from oven and stir to break up chicken into small pieces. Stir in sour cream. Serve over mashed potatoes.
Notes: I created this one day when I wanted something new. It was sooooo good! My hubby and kids request it almost every week or two. It is also very easy to make. I have made it in my crock pot with wonderful success. Another variation is to stir it into cooked rice with broccoli, top with buttered bread crumbs and bake at 350* for 35 min.
