Baja Chicken

Skinless, boneless chicken breasts are pounded thinly and marinated in Mexican beer, lime juice, molasses, chipotle peppers and cilantro, then grilled.
 

Ingredients

  • 1/4 cup fresh lime juice
  • 12 oz Mexican beer
  • 1 tablespoon molasses
  • 1 tablespoon chipotle peppers in adobo sauce, minced
  • 1/4 teaspoon salt
  • 1/4 cup sliced green onion
  • 1/4 cup chopped cilantro
  • 4 skinless, boneless chicken breast halves, pounded thin

Method

Combine all ingredients except chicken in gallon size zippered plastic bag. Add chicken and turn to coat. Chill 30 minutes or up to 1 hour. Preheat grill over medium-high heat. Remove chicken from marinade. Grill approximately 3 minutes per side. Do not use leftover marinade.

 

Notes: This delicious chicken is perfect teamed with a crunchy fresh corn salsa and spicy Spanish rice. Break out the ice cold Mexican beer and you, my friend, have a party!
