This dish is a quick and healthy meal. Serve it over some jasmine rice for a complete dinner.
Heat olive oil over medium high heat. Add garlic and stir for 30 seconds being careful not to let it brown. Add onion and cook for 1 minute. Add bok choy and cook for an additional 3 minutes. Add chicken and stir until warm throughout. Add coriander and red pepper flakes. Salt and pepper to taste and serve.
