Baby Spinach and Chicken Cream

Sauteed chicken and vegetables in a creamy sauce.
 

Ingredients

  • 2 chicken breasts, boneless
  • 3 garlic cloves
  • 1 white onion, chopped
  • 1 package baby spinach
  • 2 carrots, cut in half
  • 2 celery pieces
  • Heavy whipping cream

Method

Cook chicken with onions, garlic and celery. Once chicken is almost done, add carrots, and spinach and cook for 3 minutes. In a blender add one chicken breast and remainder of mixture and blend until soft and creamy. Return to pan and cook 5 minutes. Cut other chicken breast into small pieces and pour blended mixture over top. Optional, add a spoonful of heavy cream.
