Annie's Chicken Dish

Chicken is cooked in a seasoned sauce of fat-free ranch dressing, sour cream, ricotta, & half-and-half, and served on whole wheat noodles.
Ingredients
- 2 boneless, skinless chicken breast halves
- 1 Tbsp olive oil
- 1/4 cup fat free ranch dressing
- 1/4 cup fat free sour cream
- 1/4 cup fat free ricotta cheese
- 1/2 cup fat free half-and-half
- 1 Tbsp garlic and herb salt-free seasoning
- 1 Tbsp salt-free chicken seasoning
- 8 oz whole wheat noodles
- Parmesan cheese

Method
Salt and pepper chicken breasts; brown in olive oil. Combine the ranch dressing, sour cream, ricotta cheese and half-and-half with the garlic and herb seasoning and chicken seasoning; pour over chicken and cook till done on med. heat, about 20 minutes or till 165F internal temp. While the chicken is cooking cook the noodles and drain. When chicken is done transfer to a warm plate. Add the noodles to the chicken sauce and heat till noodles are hot. Put a chicken breast on each plate and half of the noodles on each plate. You can grate some parmesan over this, if you like.
Notes: If sauce is too thick add a little more half-and-half to desired consistency.
