Almond-Crusted Chicken with Lemon-Ginger Aioli

This chicken is made special with almonds in the coating. The aioli, or mayonnaise mixture, is flavored with lemon juice and fresh ginger.
Ingredients
- Chicken:
- 4 skinless, boneless chicken breast halves
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 eggs, slightly beaten
- 1/2 cup fine dry bread crumbs
- 1/2 cup finely chopped almonds
- 3 tablespoons canola oil
- Aioli:
- 1/4 cup butter or margarine, room temperature
- 1/4 cup light mayonnaise
- 1 clove garlic, minced
- 2 teaspoons lemon juice
- 1 teaspoon grated fresh ginger (or 1/4 teaspoon ground ginger)

Chicken: 1. Pound chicken breasts to 1/2-inch thickness. Dredge in flour. Dip in egg in shallow pan or bowl. 2. Combine bread crumbs and almonds in shallow pan. Coat chicken with mixture. 3. Saute chicken in oil in large skillet until tender and no longer pink (170 degrees F.), 12 to 15 minutes. 4. Serve on warm platter with dollops of Lemon-Ginger Aioli (recipe follows.) Garnish with watercress sprigs, if desired. Aioli: Combine all ingredients in small bowl. Stir until smooth.
