Alexandra Maria's Curry Chicken Philly

Shredded chicken is combined with desired amounts of bell pepper, onion, mushrooms, curry powder, vinegar, and Jack cheese in tortilla wraps.
 

Ingredients

  • Olive oil
  • 1 tsp minced garlic
  • Chopped onions
  • Bell peppers (orange, yellow, green and/or red), cut into strips
  • Mushrooms, sliced
  • Curry powder (to taste)
  • Red wine vinegar
  • Black pepper (to taste)
  • Thinly sliced Deli chicken, pulled apart (allow 3 slices for one serving, 6 for two, etc)
  • Monterey Jack cheese (sliced)
  • Tortilla wraps

Method

Preheat grill to medium. In skillet heat 1 tablespoon olive oil; add onions and garlic; cook for 1 minute. Add peppers and mushrooms to skillet. Add curry powder and red wine vinegar, stirring constantly to ensure peppers cook evenly. If peppers start sticking to pan add another tablespoon of olive oil. Then add black pepper. Once pepper strips look cooked, stir in shredded chicken. Cook about 5 minutes on medium heat. If you want to add more curry powder, you can do so at this time. Place slices of cheese in the tortilla wrap; add the cooked mixture. For a nice presentation, place the tortilla wrap in a George Foreman grill; heat & press about a minute and a half.

 

Notes: FOR VEGETARIANS: Same everything except the chicken. Can put in pine nuts for extra protein and make yellow rice to fill you up.
