African Chicken Peanut Soup


Peanut butter adds a nutty flavor to this canned chicken with rice soup fix-up. Black beans and sweet potatoes add interesting flavor and texture.



Ingredients:

  • 2-3 Sweet Potatoes  
  • 1 clove crushed garlic  
  • 1 red onion, diced  
  • 1 red pepper, diced  
  • 2 cans chicken w/rice soup (I like Progresso)  
  • 1 cup chicken broth  
  • 1/2 pound cooked chicken pieces  
  • 1/4 cup salsa  
  • 1 can black beans  
  • 2 Tbsp. creamy peanut butter

Method

Spray pot with cooking spray. Dice sweet potatoes and brown on medium. Add garlic and red onion and pepper and cook for 2-3 minutes until toasty. Add soup, broth, salsa and black beans. Simmer for 30 minutes. Add chicken and heat through. Just before serving, whisk in peanut butter. Enjoy!

Notes: The ingredients sound strange, but this is SUCH delicious soup! I am not even a big fan of sweet potatoes, but this is wonderful!
